Mango Clementine Salad

While in New York City on the 4th of July, I stumbled upon this local recipe.  It’s a healthy and refreshing salad, perfect for summertime.  Mangos are reported to be a good source of iron and are high in antioxidants.   Clementines are a good source of Vitamin C, potassium, thiamin, and niacin.  They also contain fiber and are a good natural energy boost.  Clementines have almost no fat, and an average Clementine has only about 35 calories.

Ingredients:

4-6 Clementines

2 Mangos

1 teaspoon grated lemon peel

½ teaspoon fresh lemon juice

4 mint leaves

Directions:

Peel mangoes and clementines.  Cut into small pieces and place in a medium size bowl.  Add the teaspoon of grated lemon peel and ½ teaspoon of lemon juice.  Chop mint leaves in small strips and add to the bowl.  Mix all ingredients well and serve.  Enjoy the wonderful flavors!
